I love sausage. I hate knowing how little nutrition is in store-bought sausage. Can you have the best of both worlds? Of course! Make your own. With relatively few ingredients, you can put together sausage patties fit for breakfast, brunch, or dinner. Or make sausage balls for inclusion in pasta or on pizza.

Below are the basic ingredients that I would suggest you use, but there are so many ways to tailor it to your tastes. Check out the Optional Sausage Ingredients for some suggestions. Quantities of each will depend on the desired intensity of your preferred flavour. There are no rules - you'd be hard pressed to screw this up. You can control fat content without sacrificing flavour by substituting ground chicken or turkey for the standard ground pork.

As with all of my recipes, have fun with this one. Play around with the ingredients depending on the meal or occasion. Whether you like your sausage mild or spicy, this recipe is a sure winner.

Basic Sausage Ingredients:

1 lb. ground pork or chicken or turkey 2-4 garlic cloves, minced
1 egg 2-3 tsp whole or ground fennel seeds*
1/4 c. breadcrumbs Sea Salt & Fresh Ground Pepper

* If you like the grainy texture of whole fennel seeds, leave them whole. If you would rather have a thorough distribution of fennel without the texture, grind them up with a food processor, spice mill or mortar and pestle.

Optional Sausage Ingredients:

Extra Garlic Dried basil/oregano (Italian) Chili powder
Cayenne Pepper Fresh ground pepper Fine sea salt
Honey/Maple Syrup (Sweet) Grated Cheese Nutmeg
Ground Thyme Parsley Finely Chopped Onion
