ROASTED GARLIC MASHED POTATOES

This recipe combines the pretty standard mashed potato recipe with the rich, aromatic flavours of roasted garlic and rosemary. It can be easily adjusted according to the number of people you're serving.

8-10 potatoes, skin on, washed

1/2 c. sour cream

1/3 c. butter

1 head roasted garlic

1 1/2 tbsp fresh OR 3 tsp dried rosemary

Salt and pepper to taste

  1. Cut potatoes into even-sized chunks and steam or boil until fork-tender. Remove from heat and drain water.
  2. Add all other ingredients and beat until smooth.
  3. Check seasoning and adjust if necessary.
  4. Serve immediately or cover to keep warm.

ROASTED GARLIC

Preheat oven to 375o. Cut the top quarter off of a full bulb (head) of fresh garlic. Place in small ramekin or other oven-proof dish (even aluminum foil will do, but don't full enclose). Drizzle generously with olive and and place in oven for 30-40 minutes, or until tops of cloves just begin to brown. Remove from oven and let cool before squeezing cloves from skin.
