DOUBLE CHOCOLATE FRUIT &
SEED BARS
This nutritious but tasty,
nut-free recipe is adapted from the
Lunchbox Survival Bars recipe from Today's
Parent magazine.

3 eggs
3/4 c. sugar
3/4 c. whole wheat flour
1/4 c. ground flax seed
2 tsp. cocoa powder
1 tsp. cinnamon
1/2 tsp. salt
2 c. mixed chopped dried fruit
1 c. semi-sweet chocolate chips
1 c. pumpkin and/or sunflower seeds |
Notes:
-
Flax seeds are a great source
of soluble fibre and Omega-3
Fatty Acids. Grinding seeds
allows you to get the most
nutrition from them.

Some dried fruits to try:
Apricots, Raisins, Cranberries,
Black Currants

Cocoa contains flavonols that
promote heart health

Cinnamon contains
antioxidants that slows cellular
aging

Preheat oven to 350ºF.
Grease 8 in. square baking dish.

With
electric mixer, beat eggs and sugar for
2-3 minutes, until pale in colour.

Add flour,
flax, cocoa powder, cinnamon and salt
and beat just until combined.

Stir in the
remainder of ingredients and mix to
incorporate.

Pour into
baking dish and bake for 30-40 minutes,
until edges are slightly browned and a
toothpick inserted into the middle comes
out clean.

Let cool
completely before cutting with serrated
knife.
