RECIPES
Learning the
basics of cooking - what tools to use when, various cooking
methods, what flavors work well together, etc. - is better than
the best recipe out there. Once you understand the
aforementioned principles, you can truly get creative and there
really is no need for a recipe.
That being
said, I still browse online periodically, looking for meal ideas
to match the mood I'm in, to accommodate the ingredients I have
on hand, to please the guests I've invited for dinner, or to
pair nicely with a bottle of wine that I've been wanting to try.
Following a recipe helps guarantee the success of the end
product. But from there, you can always tweak it to make it
better and make it your own.
I believe that
Chef Michael Smith says (and I agree), "If it tastes good, it is
good." Translation: Follow your taste buds - they never lie.
NOTE: With
many of the recipes that I add, I try to provide variations to increase
nutritional benefit. Some of the suggestions are provided to
help you prepare the recipe in a way that may better suit your
